At only 370 calories per serving, this delicious stew combines tender chicken, flavourful chorizo, and some spices, all cooked together in a single pot for ultimate convenience. Perfect for meal prep, this dish can be made ahead and tastes even better the next day. Enjoy a nutritious, low-calorie dinner that’s simple to prepare and sure to satisfy.


  • 500g scrubbed baby potatoes, halved
  • 4 garlic cloves, thinly sliced or crushed
  • 2 tins tomato 1 beef stock 75g chorizo, peeled and diced
  • 3 chicken breasts, diced
  • 1/2 tsp sweet smoked paprika
  • 1/2 tsp dried oregano Sea salt and freshly ground pepper
  • Fresh basil for serving (optional)


  1. Preheat oven to 200°C. Put everything into an ovenproof casserole dish, season with sea salt and lots of freshly ground black pepper. Toss together and pop into preheated oven for 40 minutes or until the chicken is fork tender.
  2. Serve with vegetables of choice, sprinkle some fresh basil over if using.

Reheating the One Pot Stew 

This stew can be made up to a day ahead – it will taste even better as the flavours develop. Allow the cooked stew to cool completely, then chill in the fridge until needed. To reheat and serve, place in a saucepan over a medium heat stirring occasionally until heated through.

Freezing and defrosting

Freezing and defrosting the casserole Transfer to an airtight freeze-safe container. Seal and freeze up to 3 months.

To serve, defrost thoroughly in the fridge overnight and then place in a saucepan over a medium heat to heat through.
