Warm up your meals with my Low Calorie Spicy Root Vegetable and Lentil Casserole Recipe! This hearty and nutritious dish serves 4 and comes in at only 230 calories per serving. Packed with chunks of potatoes, carrots, parsnips, and protein-rich red lentils, this casserole is flavoured with curry paste or powder and garnished with fresh coriander. Perfect for a cosy dinner, this easy-to-make recipe is both satisfying and healthy. Serve with low-fat yoghurt and naan bread for a complete, delicious meal that’s sure to become a family favourite.


  • 2 tbsp sunflower or vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 700g potatoes, peeled and cut into chunks
  • 4 carrots, thinly sliced
  • 2 parsnips, thinly sliced
  • 2 tbsp curry paste or powder
  • 1L vegetable stock
  • 100g red lentils
  • A bunch of fresh coriander, roughly chopped
  • Low-fat yoghurt and naan bread to serve


  1. Heat the oil in a large pan and cook the onion and garlic over a medium heat for 3-4 minutes until softened, stirring occasionally.
  2. Tip in the potatoes carrots and parsnips, turn up the heat and cook for 6-7 minutes, stirring until the vegetables are golden.
  3. Stir in the curry paste or powder and pour in the stock and bring to the boil.
  4. Stir in the curry paste or powder, pour in the stock and then bring to the boil.
  5. Reduce the heat , add the lentils, cover and simmer for 15-20 minutes until the lentils and vegetables are tender and the sauce has thickened.
  6. Stir in most of the coriander, season and heat for a minute or so. Top with yoghurt and the rest of the coriander.
  7. Serve with naan bread.
