Ingredients

  • 1 twin pack of sugar-free strawberry jelly
  • 1 low-fat strawberry yoghurt
  • Fresh strawberries

Method

  1. Make up one pack of the jelly with 500ml boiling water.
  2. Let cool and poor into two glasses and let set to a “near wobbly” stage. Place the glass on its side and secure in place and refrigerate until set.
  3. Make the other pack of jelly up with 250ml boiling water and refrigerate for 45 minutes – 1 hour until jelly is almost set. It will still be very wobbly. Add the yoghurt to the just-set elly and blitz with a hand blender until nice and fluffy and blended. It will be very pale pink. It’s at this stage you can add any fresh or frozen berries.
  4. Spoon the mousse in with the now set jelly in the glass and smooth the top of the mousse.
  5. Place back in the fridge or in a cold place to set completely. this will take about 1 hour. Serve decorated in fresh berries.
  6. This dessert will last up to 3 days in the fridge.
