Warm up this winter with my Low Calorie Winter Warmer Soup, a delicious and guilt-free lunch that’s perfect for colder days. This nutritious soup is packed with butternut squash, cauliflower, leek, and a hint of Chinese five spice, all simmered together to create a comforting, flavourful dish. Amazingly, it’s zero calories per serving, making it the perfect choice for those watching their intake. Easy to prepare in a soup maker or on the stovetop, this recipe is perfect for meal prep and can be frozen for future use. Enjoy a cosy, healthy bowl of soup that’s as satisfying as it is slimming!

Ingredients

  • 1 butternut squash, skin on seeds discarded and chopped
  • 1 onion, chopped
  • 1/2 head cauliflower, broken into small florets
  • 1 leek, washed & sliced
  • 1 tsp Chinese five spice
  • 1 veg stockpot, made up with 1.4L boiling water

Method

  1. Pop all the ingredients into your soup maker, cook on chunky and blend to your own preference

OR

Pop all ingredients into a saucepan and simmer until veg is tender. Then blend to your own preference.

Cool and freeze for use in the future.
